Generations ago winemakers discovered that including a small portion of white grapes in a red ferment deepened the colour and added complexity to the nose. The shiraz and roussanne grapes in this wine were grown side by side, harvested and fermented together, then aged in a mixture of old and new French barriques before bottling.
With all my wines I ‘tread as lightly as I can’ letting the fruit and the flavours of the Tabilk ‘terroir’ shine through.
